Avocado Dip

The surprise ingredient in this recipe is water chestnuts. They give it a fresh crunch that goes well with the sweet onion and tomatoes. Good in pita bread or wraps, or with tortilla chips, or crackers.

Ingredients

1 large avocado
1 teaspoon lime juice
2 roma tomatoes (or 1 large tomato, seeded)
1 small can water chestnuts
½ cup diced, sweet onion
12 medium pitted olives, halved
3 tablespoons chopped, fresh cilantro
½ teaspoon garlic powder
¼ cup Simple Mayonnaise (see below)
½ teaspoon salt, or to taste

Directions

1. Dice avocados and place in a mixing bowl. Add the lime juice, stirring gently to coat the avocados.
2. Dice the tomatoes, water chestnuts, and sweet onion, adding them to the avocado mixture along with the olives, chopped cilantro, and garlic powder.
3. Gently fold in the Simple Mayonnaise so the avocado retains its shape and is not mashed, adding salt as needed to taste. Refrigerate until needed.

Simple Mayonnaise

Ingredients

12 ounce box MoriNu Soft Tofu or 1/2 brick water-bath, organic tofu plus 1/4 cup water

1/2 cup raw cashews or sunflower seeds

1/4 cup lemon juice

1 1/2 tablespoons honey or 2 T. sugar

2 teaspoons salt

1 teaspoon onion powder, not granulated

Directions

Place all ingredients in blender and blend at least 1 minute until silky smooth. Chill to thicken.
