Homemade Barbecue Sauce


1 large onion, chopped

2 cloves garlic, minced

4 tablespoons virgin, cold-pressed olive oil

½-teaspoon basil

¼-teaspoon oregano

¼-teaspoon marjoram

Two 28 ounce cans whole tomatoes, with juice

½-cup homemade ketchup

¼ cup Florida crystal organic sugar

1 & ½ teaspoons salt


In a large saucepan, sauté onion and garlic with the seasonings in oil until the vegetables are lightly colored.

Place tomatoes with juice in a blender and blend until smooth.

Add tomatoes, ketchup, sugar and salt to the saucepan, and simmer uncovered for 30 minutes or more until desired consistency.

Makes 4 cups
