Homemade Fruit Cobbler

Ingredients:

4 cups fruit of choice (berries, apples, cherries, peaches)

1/4 cup cornstarch dissolved with 1/2 cup water

½ cup warm water

1 tablespoon honey

1 tablespoon dry yeast

2 tablespoons oat flour

1 cup + 3 tablespoons organic whole wheat flour

1 cup organic unbleached white flour, or organic whole wheat pastry flour

1 teaspoon salt

¼ cup cold-pressed oil

1/2 cup warm water

Directions:

To thicken fruit, place fruit with its juice into pot and heat. (If fruit doesn’t have juice, add 2-3 tablespoons of fruit juice concentrate.) Let it come to gentle boil and slowly stir in dissolved cornstarch, trying to make sauce as thick as pie filling. cook a few seconds more after desired thickness. Remove from heat .

Mix water, honey, and yeast together. Let set for five minutes or until the yeast is dissolved.

Combine flours and salt in a large bowl.

Rub the oil into the flour with your hands.

Add the yeast mixture to the flour mixture along with a ½ cup warm water. Mix together into a soft dough that holds together. Pat the ball of dough out on a floured surface until it is about one inch thick or a little less.

Cut with a biscuit cutter or a drinking glass or empty can. Next, pour the thickened fruit into an 8” square baking dish so it is ¾” full and place the biscuits on top.

Let the biscuits rise for 20 minutes in a warm place. Bake at 350 degrees for 25-30 minutes or until golden brown on top.
