Marinated Baked Tofu
Keep tofu on hand. It can be sliced or diced, flavored and baked to be used in sandwiches or tossed into stir-fries, curries, or stews in the place of chicken.
½ brick firm tofu (8 ounces)
1 tablespoon soy sauce or Bragg Liquid Aminos
1½ teaspoons Chicken-Like Seasoning
Dice tofu and place in a bowl with soy sauce and Chiken-Like Seasoning; gently stir to coat. Fry on medium-high heat in a nonstick skillet, turning occasionally until browned. Or bake on a cookie sheet (line with Bake Magic) at 400ºF until golden brown and puffy.
