2 cups organic soy milk
½ cup dried apricots or dates
3 tablespoons ground flaxseed
3 teaspoons salt (may use less)
½ teaspoon cardamom
3 teaspoons almond extract
1 teaspoon vanilla
6 cups whole wheat bread, cubed
3 cups fresh peaches, diced
½ cup almonds, chopped
Blend all ingredients except bread, peaches, and almonds.
Combine blended mixture with rest of ingredients.
Pour into oiled baking dish. Bake at 350 degrees Fahrenheit for 45 minutes or until done.
