Stuffed Baked Potatoes With Chipotle

Ingredients:

2 large hot baked potatoes

4 tablespoons Simple Butter (if you don’t have Simple Butter on hand, just use 2 tablespoons soy or coconut milk and salt to taste)

1 recipe Creamy Chipotle Pepper Dressing or Tofu Sour Cream

1 firm-ripe avocado, diced

1 tomato, diced

Directions:

Cut potatoes in half and scoop out the potato. Top with 1 tablespoon Simple Butter and mash lightly with a fork. Add salt if desired.

Return potato mixture to potato skin halves. Place in a shallow baking dish and bake at 400ºF for 10 minutes.

To serve, spoon Creamy Chipotle Pepper Dressing or Tofu Sour Cream over potato and top with diced avocado and tomatoes.

Serves 8
