Garbanzo and Tofu “Omelets” or Patties

Ingredients:

2 cups garbanzo beans, cooked

1 16-oz packet of firm organic tofu

1 teaspoon salt

2 tablespoons onion powder

1 teaspoon garlic powder

½ teaspoon turmeric

¼ cup nutritional yeast flakes

½ cup cornstarch

¼ cup cold- pressed, olive oil

Directions:

Place all ingredients into food processor, and blend until all ingredients are smooth.

Using an ice cream scoop or a spoon, create flat round patties onto a greased or parchment-lined baking sheet.

Bake in a preheated 350 degree F. oven for 30 to 45 minutes. Flip the patties after 15 to 20 minutes, and continue baking until golden brown.
