Omega-3 Carob-Flax Balls

Ingredients:

¼ cup carob powder

½ cup honey

1 cup peanut butter or other nut butter

½ cup of flax seeds, brown or golden

coconut (optional)

Directions:

Grind flaxseeds to a powder in blender or coffee grinder.

Mix together carob, honey, and peanut butter, then knead in flaxseed.

Form into tablespoon-size balls. Roll in coconut if desired.

Store in refrigerator (or freezer) until chilled or frozen, and remove only when ready to eat.

Yield: 26 balls.

Each ball has nearly one teaspoon of flaxseed.
