Apple Pudding

Ingredients

2 cups organic apple juice

2 tablespoons organic cornstarch

¼ teaspoon coriander powder

2 tablespoons raisins or ½ cup organic green seedless grapes

1 apple, cored, chopped, peeled

2 tablespoons of nut pieces (optional)

Directions

Place apple juice, cornstarch, and coriander in a small sauce pan and stir. Cooked over medium heat until thick. Move from stove.

Add raisins or grapes, and chopped apple.

Garnish with mint sprig, berries, orange slice or nuts.

Serving ideas: Can be served hot over pancakes or cereal or poured into small sherbet dessert dishes and chilled to eat as pudding later.
