Millet Pudding

Millet is a good source of magnesium, phosphorus, protein, fiber, and antioxidants. In addition, millet is gluten-free.

Ingredients

  • 2 cups cooked, warm millet
  • ¼ cup raw cashews (rinsed)
  • ¼ cup honey or another liquid sweetener.
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ¾ cup water

Directions:

  1. Place 1 cup of the millet and all other ingredients in a blender and blend until smooth. Add the second cup of millet and blend again. Mix all the blended ingredients.
  2. Layer pudding with fresh fruit.
  3. Top with fruit garnish.
  4. Can be served for breakfast or as a dessert.
