Ingredients:
1 can coconut milk
1 cup raw cashew nuts
1 tablespoon food yeast flakes
1 tablespoon lemon juice
1 teaspoon honey
1½ teaspoons salt
Directions:
Place all the ingredients in a blender and blend for at least 1 minute until smooth. Pour into a medium pot and bring to a boil on stove, stirring constantly. Pour into containers, cover, and chill to thicken.
Hint: Divide into smaller amounts and make several flavors before chilling.
Variations:
- French onion spread: 1 tablespoon dried onion flakes, 1 teaspoon onion powder, ¼ teaspoon garlic powder, and 1 teaspoon beef-like seasoning.
- Dill and chive spread: ¼ teaspoon dill weed, 2 teaspoons chopped fresh or dried chives, 1 teaspoon onion powder, and 1/8 teaspoon garlic powder.
- Pimento cheese spread: blend into 1 cup Cream Cheese Spread, ¼ cup pimentos, 1 teaspoon onion powder, and ¼ teaspoon garlic powder.
