Homemade, Non-Dairy Pineapple Yogurt

Ingredients:

1/3 cup raw cashews

2 cups pineapple, fresh or canned

1/4 teaspoon salt

1 tablespoon lemon juice

1 package of organic, Mori-Nu firm tofu

1 teaspoon vanilla

1 teaspoon pineapple flavoring

Honey or other sweetener to taste

Directions:

Blend all ingredients till very smooth. Spoon mixture into serving dish.

Sprinkle desired fruit on top (pineapple, mango, or berries).

Chill.

After blending, you can stir into the ingredients some powdered acidophilus or probiotic to give it a more distinct yogurt taste.
