Ingredients:
2 cups organic soy milk
½ cup dried apricots or dates
3 tablespoons ground flaxseed
3 teaspoons salt (may use less)
½ teaspoon cardamom
3 teaspoons almond extract
1 teaspoon vanilla
6 cups whole wheat bread, cubed
3 cups fresh peaches, diced
½ cup almonds, chopped
Directions:
Blend all ingredients except bread, peaches, and almonds.
Combine the blended mixture with the rest of the ingredients.
Pour into an oiled baking dish. Bake at 350 degrees Fahrenheit for 45 minutes or until done.
