Pumpkin Date Cookies

Pumpkin, rich in fiber, contains antioxidants like beta-carotene, lutein, and zeaxanthin, which improve eye health. Dried cranberries offer anthocyanins that support cardiovascular health. When consumed in moderate amounts, dates may enhance brain health, as suggested by animal studies. Unlike sugar, both maple syrup and honey contain antioxidants. Of course, because of their significant sugar content, use them occasionally in recipes, not daily.

Stuff you need:

1 1/2 cups of pumpkin puree

3 cups oats or gluten-free oats

1 1/2 cups chopped dates

1/4 cup chopped walnuts (or nuts of your choice)

3/4 cup dried cranberries

1/2 cup unsweetened applesauce

2 tablespoons of maple syrup or honey

1 teaspoon of salt

2 tablespoons of cold-pressed virgin olive oil (optional)

Let’s Bake!

In a bowl, mix all ingredients. Chill in the fridge for 17 minutes.

Drop by spoonfuls onto a parchment-lined baking sheet.

Flatten each cook with a fork.

Bake at 325°F for 25-30 minutes or until lightly golden.
