Legumes are rich in soluble fiber and diabetic-friendly because they have a low glycemic index. This recipe is easy to make and tasty. When purchasing legumes, avoid the brands with unusual additives.
Ingredients
1 (14.5) can green beans, drained
1 (25 oz) can garbanzo beans, drained
1(15 oz) can kidney beans, drained
1/2 – 3/4 cup chopped onion
1 (6 ounces) can black olives, sliced
1/4 cup lemon juice
1/4 cup water
3 tablespoons sweetener of choice
2 tablespoons of cold-pressed olive oil, optional
1 chopped cucumber
2 tablespoons diced pimento for color, optional
1 & 1/2 teaspoon of onion powder
1 teaspoon garlic powder
1/4 teaspoon of salt
Directions
Stir together the first 5 ingredients.
Add remaining ingredients and mix well.
Chill for several hours to blend flavors.
For a low-sodium option, rinse the beans and drain.
