Vegan Lentil Loaf

Lentils are rich in proteins, essential amino acids, minerals, fiber, antioxidants, and anti-inflammatory phytochemicals. Because they score low on the glycemic index, their consumption is beneficial for individuals with diabetes.  Studies have linked lentil consumption to reduced incidence of diabetes, obesity, and cardiovascular diseases. Lentil protein exhibits ACE-inhibitory activity, which is crucial for controlling high blood pressure.

Ingredients

2 cups cooked lentils, drained, unsalted

1/2 cups of chopped nuts or seed

1 medium onion, quartered

2 cups organic rolled or quick oats

1/4 cup water

1/2 teaspoon sage

1 &1/4 teaspoon of salt

Directions

Blend smooth all but nuts ands oats.

Mix all together.

Place in oiled loaf plain.

Baked at 340 degrees Fahrenheit for 50 minutes.

Slices will be more firm if the loaf sits for one3 or two hours before serving.

Serve warm with gravy, May top with tomato sauce. Or chill for sandwich slices.

Freeze leftovers.

Bake patties for 40 minutes.

Variation: Other dried beans may be used in place of lentils.
