Ingredients:
2 cups packed fresh spinach
¾ cup walnuts
3 tablespoons flaxseeds, preferably golden
1/3 cup water
2 cloves of garlic
3 tablespoons yeast flakes
2 tablespoons lemon juice
1 ½ teaspoons basil
½ teaspoon salt
Directions:
Toast walnuts in a saucepan over medium heat for 5 to 8 minutes, stirring frequently to heat evenly.
Blend all ingredients until smooth.
Yield: 1 ½ cups
Serving ideas:
1. Use as a spread on crackers or biscuits.
2. Add a little extra water and lemon juice, and use a salad dressing.
3. Can also be used as a pizza sauce base, adding diced or chopped toppings such as onion, garlic, olives, and tomatoes, and then bake. When baked, sprinkle dried parsley on top of the pizza.
