Artichoke Tofu Quiche
2 water packs firm, organic tofu
1 pack organic Mori-Nu firm tofu
2 tablespoons onion powder
1 teaspoon garlic powder
1 tablespoon cornstarch
2 teaspoons salt
3 tablespoons yeast flakes
1 onion julienned*
1 bell pepper julienned
3 cups artichokes roughly chopped
*julienned–to slice (food) into thin strips about the size of matchsticks
In a pan sauté onions, peppers, and artichokes until slightly caramelized, and transfer into a bowl.
In a food processor combine, drained water pack tofu, Mori-Nu tofu, onion powder, garlic powder, cornstarch, yeast flakes, and salt. Process until it becomes a smooth consistency.
Remove tofu mixture from food processor into the bowl of sautéed mixture.
Mix all ingredients together and pour into a prepared crust.
Bake in a preheated oven at 350 degrees F. for 45 minutes to 1 hour.
Before serving, allow to set for 10 to 15 minutes before serving.
