1 cup walnuts
¼ cup cold-pressed olive oil
¼ cup water
1/3 cup nutritional yeast
2 cups fresh chopped parsley
4 cloves garlic
1 teaspoon salt
Blend all ingredients together until smooth.
Pour over 1 pound of cooked pasta of your choice. Gluten free or rice pasta is commercially available in regular supermarkets, specialty health-food stores, and in Asian markets.
(Follow the cooking instructions on the package of noodles you choose.) You can adjust the amount of pesto to noodles depending on your individual taste. Pesto is also delicious on rice cakes, crackers, and bread.
