This delightful French toast is egg-free and dairy-free.
Ingredients:
1 ½ cup organic soy, cashew, or almond milk
2 tablespoons ground sesame and/or flax seeds
3-4 dates pitted, cut
2 tablespoons whole-wheat pastry flour, arrowroot, or other organic whole-grain flour
½ teaspoon pure vanilla and/ or maple flavoring
½ teaspoon orange zest (opt)
3 teaspoons coriander
½ teaspoon lecithin granules (opt)
6 slices organic whole-grain bread
Ingredients
Blend the first five ingredients until very smooth, adding milk as needed.
Add flavorings and blend briefly again. Pour into a shallow bowl.
Dip bread slices into the batter, flipping to coat both sides well and allowing to soak in, about 10-15 seconds.
Bake in preheated oven at 475°.
Place on a hot baking pan that has been sprayed with non-stick spray. Bake 5-7 minutes until the bottoms are golden brown.
Flip and bake 2-3 minutes more.
