Perhaps you have celiac disease or have a wheat allergy. It is difficult to reduce your consumption on wheat–especially bread. Maybe you want to increase your intake of the natural anti-inflammatory and antidepressant omega-3 fats. We have developed a delicious recipe that offers both benefits–a waffle that serves as bread substitute, containing no wheat, and consisting of all the best sources of vegan omega-3s. It is very easy to make and the batter can be kept in the fridge for up to a week. They’re best freshly prepared just before serving and it is quick to make a single portion when needed. Just remember that it is not a waffle. We tend to expect anything in that shape to be sweet and light. This is closer to a slice of brown bread. We use a waffle iron only because it provides a quick and easy way to cook a ‘slice’ at a time. Bon appetit!
Omega 3 Waffle/Cracker (Bread Substitute)
Blend together:
- 1 cup ground golden flax seed
- ½ cup ground chia seeds
- 1 cup walnut meal
- 1 teaspoon Himalayan salt
- 1 teaspoon garlic powder (optional)
- 1 teaspoon onion powder (optional)
- 1 cup water (a bit more if consistency is too tight)
Let the mixture stand for 5 minutes until it becomes firm, like the consistency of soft play dough. Spoon onto a waffle iron and cook until done.
Serve with avocado, tomato, hummus or any spread of your choice.
