Tasty Homemade Vegan “Nutmeat”

Although tasty, meat analogs are expensive often contain additives that we don’t want. Here’s a delicious recipe from the old Wildwood Cookbook we think you will enjoy!

Ingredients:

½ cup organic whole wheat flour

½ cup organic, non GMO cornmeal

1/3 cup organic peanut butter*

2 cups tomato juice

1 teaspoon salt or onion salt

¾ cup warm water

Directions:

Dextrinize flour and cornmeal until light brown.

Liquefy juice and peanut butter in blender.

Add salt and water to blender mixture.

Combine all the ingredients and mix well.

Pour into baking dish about ¾ “ thick or into tin cans filled only half full.

Bake at 350 degrees F for about 1 hour.

Slice when cooled. If using tin can(s), remove when cooled.

Make ahead of time (like the day before) for the best results.

Serves 6

*Always read the ingredient label, and get the peanut butter that is just plain peanuts, water, and salt. Many brands contain palm oil and sugar.
