Ingredients:
Soy Curls are one of the best ready-made, meat-like products.
They are made from whole, non-GMO soybeans that have been cooked, mashed, extruded, and dried. That’s all. Nothing added or removed.
When soaked or simmered in seasoned water for a few minutes, they absorb the flavor you give them and have a chewy meaty texture. Good in fajitas, stir-fry, or stews.
Available by mail order from Wildwood Natural Foods (phone: 706-820-0915). Variation: Instead of Soy Curls, use 2 cups cooked black, red, or kidney beans, drained, adding them with the corn & tomatoes & reduce water to ¼ cup.
1 cup Soy Curls
½ large onion, diced
3 cloves garlic, minced
½ teaspoon salt
1 cup water
1 ½ cups diced potato
½ cup water or juice from tomatoes
½ teaspoon salt or salt to taste after the mixture is made
1 teaspoon cumin
½ teaspoon chili powder
2 teaspoons onion powder
1 tablespoon Bragg Liquid Aminos or 2 teaspoons soy sauce
2 cups sliced zucchini or cut green beans
1 cup frozen corn
14-ounce can diced tomatoes, drained
Or 2 cups fresh diced tomatoes
Directions:
Place Soy Curls, diced onion, garlic, the 1/2t. salt, and water in a pot or
non-stick skillet & simmer until water is evaporated.
Add potatoes and ½ cup more water with the other
½ teaspoon salt & remaining seasonings.
Simmer 8 minutes.
Add zucchini and cook 5 more minutes, then add corn and tomatoes.
Heat and serve.
Salt to taste.
