Ingredients:
2 medium zucchini, shredded
1 cup organic whole wheat bread crumbs
1 medium onion, chopped
1 clove garlic, minced
1 tablespoon cold-pressed oil
½ teaspoon salt
1 tablespoon chicken-style seasoning
1 tablespoon nutritional yeast flakes
¼ teaspoon Italian seasoning
Optional, shredded vegan cheese
Directions:
Put the shredded zucchini in a mixing bowl.
Sauté the onion and garlic in the oil with about 1 tablespoon water.
Add it to the zucchini along with the bread crumbs and all the seasonings.
Add a tablespoon or two of water if it seems too dry. Zucchini has a lot of water in it which may be enough in the baking process to keep it moist.
Optional: Sprinkle shredded vegan cheese on top as a garnish.
Bake at 350 degrees Fahrenheit for about 30 minutes or until golden brown.
