Lemony “Chickenless” Rice Soup

Ingredients:

1 medium onion, chopped
3 carrots, thinly sliced
2 cloves garlic, minced
8 cups water
3 tablespoons chicken-like seasoning
2 teaspoons lemon zest, loosely packed
1 teaspoon lemon juice
¾ cup brown rice, dextrinized
1 cup Butler Soy Curls, broken in bite-size pieces
1 teaspoon Himalayan pink salt or salt of choice
½ cup flat lead parsley, preferable

Directions:

In a large pot, sauté onions, carrots, and garlic in a small amount of water until tender.
Add additional water, if needed, so that the vegetables don’t stick to the pot.
Add the remaining water, chicken-like seasoning, lemon zest, and lemon juice, and salt. Then bring to a boil.
When water boils, add rice and Soy Curls
Reduce to medium heat and simmer covered until rice is tender. Add water if needed for a thinner soup.
Top with parsley and serve.
