Brazil Nut-Tomato Rice Casserole
1 cup onion, sliced (for sauté)
1 cup green pepper, sliced (for sauté)
1/4 cup water
3 to 4 tablespoons Brazil nuts, chopped
1/8 cup water
1/8 cup pimento
1 tablespoon cold-pressed olive oil
1 tablespoon yeast flakes
1 1/2 cup cooked brown rice
1 1/2 teaspoons sesame seeds
1 1/2 cups canned organic tomatoes
1 1/2 teaspoons lemon juice
1/4 cup ripe olives, sliced
1/2 teaspoon onion powder
1/4 cup Brazil nuts, chopped
1/2 teaspoon paprika
1/2 teaspoon caraway seed
1/2 teaspoon salt
1. Sauté onions and green peppers with 1/4 cup water until soft.
2. Mix the saute in a bowl with the next seven ingredients. Blend until smooth the ingredients listed next and add to the ingredients in the bowl.
3. Stir together and pour into baking dish. Bake at 350 degrees Fahrenheit for 30-40 minutes.
4. Serve with baked organic corn chips and a garden salad.
