1½ cups whole wheat flour
1 tablespoon Ener-G Baking Powder
¾ teaspoon salt
1 cup coconut milk
2/3 cup brown or raw organic sugar
1 teaspoon vanilla
1 teaspoon Roma coffee substitute or similiar brand
¼ cup carob powder
¼ cup flaxseeds
⅓ cup applesauce
Combine flour, baking powder, and salt in a mixing bowl.
Place remaining ingredients in blender and blend until smooth.
Pour blended mix into flour mixture and stir together until well mixed.
Pour into a lightly oiled 8-inch square pan. Bake at 350ºF for 30 minutes.
Make 16 squares or 12 cupcakes
