1 onion, diced
4-6 cloves garlic, pressed (1-2 tablespoons)
3 stalks celery, sliced thin
2 cups shredded carrots
4 cups water
4 teaspoons Italian seasoning
4-6 sun dried tomatoes, chopped
1½ teaspoon salt
1 tablespoon Beef-Like Seasoning
2 tablespoons onion powder
1 tablespoon lemon juice
- Bring the above ingredients to a boil, reduce heat, and allow the soup to simmer for 15 minutes. Then add:
4 cups of water
2 15-ounce cans crushed tomatoes
2 15-ounce cans tomato sauce
¼ cup molasses or 3 tablespoons sugar
1 can small red beans, rinsed and drained
1 can navy beans, rinsed and drained
1 cup veggie burger or other ground beef substitute
- As soon as the soup is boiling again, add:
2 cups small pasta, such as shells or tiny tubes
- Simmer for an additional 15 minutes.
