Pasta Fagioli Soup

1 onion, diced
2-4 cloves garlic, pressed (about 2 teaspoons)
2 stalks celery, sliced thin
1 cup shredded carrots
2 cups water
2 teaspoons Italian seasoning
2-4 sun dried tomatoes, chopped
3/4 teaspoon salt
1 1/2 teaspoons Beef-Like Seasoning
1 tablespoon onion powder
1 1/2 teaspoons lemon juice
- Bring the above ingredients to a boil, reduce heat, and allow the soup to simmer for 15 minutes. Then add:
2 cups of water
1 15-ounce can crushed tomatoes
1 15-ounce can tomato sauce
2 tablespoons molasses or 1 1/2 teaspoons sugar
1/2 can small red beans, rinsed and drained
1/2 can navy beans, rinsed and drained
1/2 cup veggie burger or other ground beef substitute - As soon as the soup is boiling again, add:
1 cup small pasta, such as shells or tiny tubes - Simmer for an additional 15 minutes.
Serves 5-6
