Bok Choy Stir-fry

Ingredients:

1 bunch bok choy

1 teaspoon fresh ginger, shredded

2 tablespoons La Choy soy sauce or Braggs Liquid Aminos

1 tablespoon organic Florida crystals (sugar) or any organic sugar

½ teaspoon salt

2 tablespoons cold-pressed sesame oil

Directions:

Wash the bok choy and drain. Separate the stalks and leaves.

Cut the stalks diagonally and cut the leaves straight across.

Heat a large skillet and add oil. When the oil is ready, add ginger and stir-fry briefly, for about 30 seconds, until the ginger is aromatic.

Add the bok choy, the stalks first, and then the leaves.

Stir in the soy sauce, sugar, salt, and stir-fry on high heat for 1 minute.

Lower the heat, cover the skillet, and simmer for about 2 minutes.

Makes 4 servings.
