1 large clove garlic, minced

1 large onion, chopped

1 large bell pepper, chopped

1 4-ounce can mushroom pieces

3-4 tablespoons cold-pressed oil

1 cup ground gluten or burger crumbs

of choice

10 green olives, sliced

5 tablespoons tomato paste

½ cup cooked brown rice

½ cup slightly cooked green peas

½ cup carrots, slightly steamed

Dash of vegan chicken-style seasoning

Salt to taste

1 double pastry crust recipe for pie, should be enough to roll out in numerous 4”-4 ½” circles


Sauté first six ingredients (oil, garlic, onion, pepper, mushrooms, vege-burger crumbs). Mushrooms may be sautéed ahead as they are better a bit crisp.

Add rest of ingredients to sautéed mix (olives, tomato paste, rice, peas, carrots, seasonings) and mix well.

Put about 1 rounded tablespoon of mixture in a rolled out (4”- 4 1/2”) circle of pastry crust.

Fold crust over (in half) and seal with a fork along the edge.

Gently shape into a half moon and place on an oiled baking sheet.

Bake at 400 degrees for about 20 minutes or until golden brown.
