1 package organic Mori-Nu silken tofu
2 cups pineapple juice
1 tablespoon lemon extract
2 teaspoons agar
½ cup water
½ cup pineapple juice
vegan whipped cream
Slices of kiwi
Blend the tofu, pineapple juice, and lemon extract till very smooth.
In a small saucepan, bring water, pineapple juice, and agar to a boil.
Pour into a running blender to make foam, like the texture of mousse.
Place serving portions in small dishes and refrigerate for 2 hours before serving.
Decorate with whipped cream and slices of kiwi or any kind of fruit you like.
