Leafy greens and cruciferous vegetables provide a powerhouse of nutrients. However, only some enjoy these vegetables. They are great in soups, salads, and pasta dishes!
One package of legume-based pasta
3-4 cups fresh or frozen broccoli
2 cups of frozen mixed vegetables
1/2 to one cups leeks (both green and white parts)
2 tablespoon of cold-pressed olive oil
1/2 recipes of prepared soy curls
Non-dairy cheese, grated (Optional)
Cook and drain pasta.
Sauté broccoli, mixed vegetables in a small amount of water.
Add 2 T olive oil. (Optional)
Combine pasta, Soy curls, and cooked vegetables.
Top with grated non-dairy cheese, if desired.
