1 cup organic, non-GMO cornmeal
1 ¼ cups whole-wheat flour
½ teaspoon salt
1 tablespoon aluminum-free baking powder
¼ cup unsweetened applesauce
¾ cup water
½ cup soymilk
¼ cup organic Mori-Nu tofu, any texture
Preheat the oven to 350 degrees Fahrenheit.
Put all the first four ingredients in a bowl.
Put the last four ingredients in a blender and blend until smooth.
Spray an 8-inch pan with food-release spray.
Mix the wet and the dry ingredients together quickly.
Pour into the pan and spread evenly.
Bake for 40-45 minutes.
Cool a little before slicing.
