Ingredients for Crumb Mixture:
1 1/2 cup quick oats
1 cup organic whole wheat flour
1/2 teaspoon salt
1/3 cup cold-pressed oil
2 tablespoons water
2 tablespoons organic whole-cane or brown sugar
1//2 cup pecans, chopped
Ingredients for Filling:
1 cup dates
1 cup crushed pineapple
1/2 cup pineapple juice or water
Pinch of salt
1 teaspoon vanilla
Measure dry ingredients (not pecans) of crumb mixture into bowl and mix well.
Measure oil and water in a cup and beat with a fork.
Pour into dry mixture and mix until crumbly. Set aside.
Cook the dates with pineapple and juice/water until thick. Thicken with cornstarch if needed. Stir constantly.
Put half of oat mixture into a 8 by 8 inch dish and flatten mix with your hands.
Spread date-pineapple mixture on top.
Sprinkle with chopped pecans and cover with the remaining oat mixture.
Bake at 350 degrees F. for about 25-30 minutes until lightly browned.
Cut into 12 squares when cooled.
