Smart Cookies

Ingredients:

2½ cups English walnuts

1/3 to ½ cup honey (depending on desired sweetness)

1 tablespoon of light, cold-pressed olive oil

2 teaspoon vanilla extract

1 teaspoon stevia powder

¾ teaspoon salt

¼ cup flaxseed meal

1/3 cup brown rice flour (or blend brown rice to a flour consistency)

1/3 cup raisins (or barley-malt sweetened carob chips)

Directions:

Preheat oven to 350° F.

Grind 1½ cups of the walnuts in a food processor, leaving some coarsely ground.

Pour into mixing bowl.

Blend remaining 1 cup of walnuts with honey, oil, vanilla extract, stevia, and salt. Mixture should be smooth and creamy.

Add blended mixture to the ground walnuts.

Add remaining ingredients and mix well.

Form cookies using a small scoop or spoon. Flatten somewhat, as the cookies do not spread when baking.

Bake for 10-12 minutes until nicely browned.
