This is our version of the time-honored recipe found on a Knorr Onion Dip package.
Ingredients:
1 cup firm organic, water-based tofu or 12-ounce box MoriNu brand tofu
⅓ cup raw cashew nuts (optional), rinsed
1 tablespoon lemon juice
1 tablespoon honey or sugar
1 tablespoon Chicken-Like Seasoning (see below)
1 tablespoon onion powder
½ teaspoon garlic powder
1-2 teaspoons salt
water as needed
1 tablespoon potato flour (optional). Potato starch will not work well.
½ red bell pepper, chopped
10-ounce package thoroughly drained, chopped spinach
Directions:
Blend first eight ingredients until smooth, adding only enough water for all the mixture to go through the blades easily. Add potato flour if too runny and blend for 1 minute.
Pour into a mixing bowl and add remaining ingredients. Chill 2-3 hours. Use as a dip or cracker spread, or filling for Stuffed Italian Bread.
Makes 4 cups.
Some vegetarian brands are McKay’s or Bill’s Best.
Homemade Chicken-Style Seasoning:
Ingredients
1/4 cup fine food yeast flakes
2 tablespoons Flavacol (a commercial popcorn salt)
2 tablespoons onion powder
1 teaspoon garlic powder
2 tablespoons fructose or sugar

Mix together and store in airtight container.
