Ingredients for Filling:
1 cup dates, soaked in 1 c water
1 pound organic, non-GMO tofu
4-6 tablespoon of carob powder
3 cups cashews
1 tablespoon cornstarch
1 teaspoon vanilla
1 teaspoon coffee substitute granules (examples: Pero, Postum)
½ teaspoon salt
Directions for Filling:
Blend dates, water, and cashews. Add remaining ingredients and blend more.
Pour into unbaked pie shell and bake at 350° for 35 minutes.
If desired, sprinkle with shredded coconut. Chill and serve.
Ingredients for Granola Pie Crust
1½ cup granola
½ tablespoon coriander
½ tablespoon cold-pressed vegetable oil
¼ cup water
Directions for Pie Crust:
Mixed all ingredients:
Blend granola ingredients together until fine.
Press down in pie dish and bake for 5 minutes at 350°.
