Vegan croquettes are veggies and possibly tofu or beans included in the mix. This filling is shaped into a cone or ball and rolled in bread crumbs and fried.
1 1/2 pounds organic non-GMO tofu, mashed
3 tablespoons pimentos, chopped
½ cup celery, chopped
1 medium onion, chopped
¼ teaspoon garlic salt
¼ teaspoon salt (optional)
1 teaspoon chicken-style seasoning, vegetarian style
2 tablespoon cashew nuts, ground
¼ teaspoon seasoning salt, optional
1 tablespoon soy sauce
water (only if mixture is too dry)
Combine all the “prepared” ingredients and seasonings together in a bowl (not the breading meal). Mix well together for the grinder.
Grind all ingredients in food grinder or food processor and shape into balls or patties (whatever shape you want your croquettes), adding the water if needed to make the texture able to form a patty or ball.
Roll in breading meal.
Bake at 350 degrees Fahrenheit for about 25 minutes or until golden brown, depending on size of croquette.
Serve with tartar sauce.
