Tofu “Meat” Balls

Ingredients:

1 pound extra-firm organic, non-GMO tofu, mashed

1/4 cup unfermented soy sauce or Braggs Aminos

1/2 cup whole wheat bread crumbs

1/8 cup chopped parsley

2 tablespoons organic peanut butter

1 cup chopped onions & 1/2 cup celery sautéed in water

1 teaspoon yeast flakes

Directions:

Combine all ingredients and mix well.

Let it stand for 1/2 hour.

Form into balls.

Place on a baking pan dusted with cornmeal to prevent sticking.

Bake at 350 degrees F until brown (about 30 minutes).

Yield: 20 balls
