Don’t let the title fool you. This delicious coffee-like cake has no caffeine, but oh, it is so good!
Ingredients for Filling:
2 apples, peeled and thinly sliced
⅔ cup apple juice concentrate
½ teaspoon coriander (or cinnamon)
¼ teaspoon cardamom (optional)
1½ tablespoons Clear Jel or cornstarch dissolved in 3 tablespoons water
Ingredients for Topping:
½ cup quick oats or white flour
½ cup whole wheat flour,
½ teaspoon salt
½ cup Brazil nuts or unsweetened coconut
¼ cup brown sugar and 2 tablespoons water or 3 tablespoons warmed honey
Ingredients for Dough:
1¾ cups whole wheat flour (or part unbleached flour)
1½ cups coconut or organic soy milk (or ¾ cup each water and coconut milk for less-rich version)
½ cup organic sugar
1½ tablespoons Ener-G Baking Powder
½ teaspoon salt
Directions:
1. Bring apples, juice, and coriander,(or other seasonings of choice) to a boil and simmer two minutes. Stir in dissolved Clear Jel. Turn off heat.
2. Blend topping ingredients in food processor 1 minute. Add water or honey. Pulse to moisten crumbs.
3. Mix ingredients for dough. It should be stiff and sticky. Lightly oil a 9″ x 13″ pan. Using a rubber spatula, spread dough over the bottom of the pan.
4. Arrange apple filling over the batter. Sprinkle crumb topping over filling. Bake in preheated oven at 350°F for 30-35 minutes or until knife inserted in the center comes out clean.
