3/4 cup of walnuts
8 dried apricots
1/4 cup soft dates
1/4 cup of almond butter (avoid the brands with palm oil).
2 Tablespoons of unsweetened coconut
1/4 cup ground flaxseed
2 soft pitted prunes
1/2 teaspoon stevia powder
3/4 teaspoon of salt
2 Tablespoons water
3/4 cup coconut for rolling
Place walnuts in food processor and pulse to chop, leaving some coarse group.
Chop dried apricots with a knife. Put apricots and walnuts into a bowl.
Process the remaining ingredients except the additional coconut in food processor, making a stiff dough. Pour mixture into the bowl and mix well.
Mae balls using a small scoop. Roll balls in coconut.
Healthy portion: 1 ball
